Now that Libby is a year old, I think it’s safe to say we have moved past the baby-led weaning stage and onto a new chapter of food. Baby-led weaning, for us, was an easy decision. Surprisingly, we agreed on that right away. It made all meal times easy and seamless, she just eats what we eat. Fast forward six months later, she’s still eating what we eat and loving it.
I tried throughout our baby-led weaning experience to keep it simple, healthy and flavorful. And I still have the same thought process for all of our meals, simple, quick, healthy and packed with flavor. My “main goal” for the day is to eat a rainbow, so I try and add fruits and vegetables of all different colors.
Meal times are the heart of our home. Before Libby, my husband and I would often cook together and leisurely enjoy our meals in front of our favorite shows. Now that she is eating with us, its more like I grab whatever is in the fridge, freezer and pantry and make a meal out of it! Don’t get me wrong, I still love cooking and enjoy our Chopped inspired meals( Okay I’m being dramatic, its not that bad!). But my favorite time of everyday is without a doubt, the times we sit down together and eat.
Here are a few of our favorite things to munch on!
Sliced Fruit (peaches, Kiwi, Banana, blueberries, nectarine, watermelon, etc)
Steel cut oatmeal
Smoothies: Here are a few of our favorites, but a lot of the time, it’s whatever fruit we have on hand!
Banana, Spinach, Chocolate, Almond Milk, Almond Butter and Dates
Blueberries, Almond Milk, Almond Butter
Strawberries,Banana, Spinach, Pineapple, Mango, Lots of water
Banana, Dates, Cinnamon and lots of water
As I said before we always serve a rainbow of foods, so every meal is served with fruits and or veggies.
Hummus and Cucumber Sandwich w/ or without Avocado
Chickenless Chicken Nuggets
Lunch sometimes will also just be left overs from dinner the previous nights!
Snacks: Libby’s Favorite Part of the Day!
Fruits(do you see a trend here)
Veggies and Hummus or Tahini
Almond Milk Cheese squares
Coconut milk yogurt
Toast and Hummus
Chia Pudding w/ Fruit and Coconut
Marinara Pasta. Pasta is this little girls favorite meal in the entire world.
Baked Potato Nights
Libby will often deny some foods. My advice is to keep offering, what they don’t like today, could be their favorite tomorrow!I hope some of our favorites gave you a few ideas for easy, healthy snack or lunch options!
